Sour Cream Waffles


Some of my favorite memories from growing up are of spending time with my grandparents at the lake. Talk about a place where a kid can be a kid: a great big yard perfect for games of catch, beach front to a lake with perfectly blonde sand that was always sandcastle-ready, a trickling creek running through the property that housed hundreds of tiny frogs (cute for catching, perfect for fishing), and yet some of my favorite times were spent inside with my Grandma in the kitchen. It was there that I learned how to peel potatoes, clean fish, mince garlic and onions, and how to make a perfect chocolate malt. Out of all the wonderful dishes my Grandma was so brilliant at making, her sour cream waffles were by far my favorite. Now that I'm the one doing the cooking for a family, I make sure to warm up my children's bellies with the sweet and fluffy, buttery taste of these amazing waffles. I'm passing the recipe along to you under one condition: Waffles must be made by love and for love:

Ingredients:

3 eggs separated

2 tsp baking powder

1 tsp vanilla

½ tsp baking soda

¾ C Milk

¾ C sour cream

½ C butter, melted

1 ½ C flour


Directions:

Preheat waffle iron.

Separate eggs into two medium bowls. Set aside egg yolks, and beat egg whites until stiff. Set aside.

Add the baking powder to the egg yolks and stir until combined. Add vanilla, baking soda, milk, sour cream, butter and flour and mix until all ingredients are wet. Gently fold in egg whites.

Pour batter in waffle iron and cook until crisp and golden brown.
